Another wonderful celebration of VEGAN food at the monthly potluck in Boulder Creek.

I created VEGI burgers from onion red and white, broccoli, and potatoes bound together in a tempura batter and pan fried crispy and hot, then topped with lettuce, cabbage, tomato sauce with garlic and basil, oregano.

Hamburger buns and bagels, as well as corn tortillas crisp from the stove top pans provided assortment of buns and rolls.

, Mushrooms sauteed in sesame seed oil, added toppings,

Acorn squash with maple syrup and walnuts were the desert.

Hibiscus iced tea to drink.

Guests brought sliced watermelon and cantaloupe.

Life celebrates the living!

VEGAN and Vegetarian Potluck on Last Fridays

The sun is shining and so is my solar oven! I created Sweet Potato chips, Cream of Mushroom soup, and Portabella garlic bread. It is exquisite VEGAN food!

For those of you who think i am avoiding animal products because of cruelty issues, health issues, those are good enough reasons, but what is making me turn the tide is environmental. We are now loosing 200 species a day due to almost 8 billion humans, a population exploding along with the animals we raise to kill. The web of life is collapsing due to animal based diets which translate into deforestation to create cow pastures - we've now lost half to 3/4 of our forests.

That's the reason for C02 in the atmosphere and loss of oxygen production, the loss of biodiversity and habitat.

80 percent of our agriculture resources are going to feed animals instead of us. We can feed 100 people for the price of one hamburger, and the environmental harm is not being calculated.

These animals are using up the dwindling oxygen supply and are responsible for the biggest share of METHANE gas - deadliest of the greenhouse gases.
One or two more degrees of ocean warming and our Oxygen supply from the seas, the phytoplankton, will be wiped out, as they cannot handle temperature change.

This scenario of ocean warming has occurred before, due to volcanoes, and 95% of everything alive perished. Now it's entirely human created.

For those who are religious, re-visit Genesis. We were instructed to eat plant foods. The ten commandments instruct us not to kill.

No one wants to hear, or notice, or see, or connect the dots of what we are causing because few want to change anything about what they are and do.
For those with eyes to see, the signs of the times are all around us.

I am only one person, but all change comes from right where you are. Every bite makes a difference. That is why I am focusing on plant based foods, host a VEGAN potluck every month in Boulder Creek on the last Friday for lunch at Saint Michael's Community Center.

It is also why I am posting articles and science notes on social media, to raise awareness. Do you care enough to do what you can to reverse global warming and the 6th mass extinction wave currently accelerating?

Unless we re-green our world with food bearing trees, and loose our addictions to flesh, life is doomed to extinction at a rapidly accelerated rate 10,000 times normal extinction rates, and all the wars, global weather intensities, famines, and ills that are coming with it.

Ingredients

12 oz bag of non-dairy semisweet chocolate chips

One 14 oz package soft silken tofu, drained

2 teaspoons vanilla extract

1 vegan graham cracker crust

Directions

Melt chocolate chips in the microwave for 45 seconds (or until melted) and mix until smooth.

Put tofu in a blender and blend until creamy.

Add melted chocolate and vanilla to tofu, mix thoroughly.

Add tofu chocolate mixture to the pie crust and place in freezer for about an hour and a half.

This Old Car - 1994 Toyota 4 runner - Radiator repairs

We now have a 1994 Toyota 4 runner, which is a 2 wheel drive automatic, that we are featuring in the series " This Old Car!".

Our first needs have been replacing all the hoses from the radiator, which were all the original Toyota parts and have lasted over 20 years.

The best quality of parts for your vehicle is almost always the factory suggested parts, and Toyota of Santa Cruz is being featured for the main radiator hose being replaced, as well as the lower fan shroud and clips which were missing from the vehicle.

It is most likely, the lower fan shroud was not replaced by some previous mechanic, rather than being stolen or falling off.

Marc S. Lucas came recommended to us, and has a small shop in Felton.
He was the first mechanic who noticed the fan shroud was missing.

He also was the first to notice the radiator clamp was loose and needed to be soldered back in place to prevent the radiator from moving about.

Marc began by placing a large fan on top of the motor to assist the engine in cooling down.

After 5 minutes or so, he grabbed a wrench he had specially notched to fit the clamps of the main radiator hose.
His background of working with a tool and die maker has given him abilities to create his own tools.

He believes the original clamps Toyota puts on their hoses to be the best, as they always adjust themselves to keep a tight fit, unlike the previous mechanics who replaced the heater hoses, destroyed the original clips when removing them, and replacing them with the type of clamps you see frequently in plumbing applications, which will require monitoring and tightening.
We will be looking into replacing those clamps as a result, with the original Toyota clamps.

The end of the hose attaching to the radiator was left in place with the hose pointing upward to prevent fluid leaking, as an extra means of allowing heat to dissipate from the radiator.

We began by first opening up the drain at the bottom of the radiator to drain off fluid having a large basin to capture the fluids.This did not begin in earnest until the radiator cap was removed.

Once the fluids had drained adequately, Marc began the process of grinding/sanding off the metal where the soldering of the joint was to occur.
This allows a clean union for the flux and solder to be applied.

He followed with using an acid wash, and a detergent wash on the area.

He checked to make sure no pinholes or weak spots existed on the radiator.

Using a torch, he then preheated the area, applied some liquid flux, then solder with also had flux in it.

The grinder was used to remove any extra solder.

Now that the radiator was stable, the main hose was removed, the new hose fitted on with the original clamps fitting just behind a small ridge that exists on the radiator outlet, and the other pipe the hose fits on. This ridge helps the clamps further to hold in place and not slip off.

All the fluid was poured through a sieve which consisted of a simple cotton towel and looked to be clean, as it was only 2 weeks old from the prior replacement of heater hoses. Most mechanics just throw away the liquid and sell you new liquids. We liked Marc's filtering process better.

All the hoses should have been replaced at the same time, as they were all over 20 years old and wearing out, but the prior 2 mechanics who had each done a little, but not all, were remiss. It is the purpose of this article, this series, to help educate the public to be knowledgeable enough to recognize if their mechanics are conscientious. If they are not, hose failure will shortly occur and radiator fluids will be spraying the entire engine compartment.

The next step was to restore the bottom fan guard, an arched plastic piece that helps the fan keep the radiator cool, and which had been left off by some previous mechanic most likely.

A matt on the ground makes this job more comfortable and clean, and with the aid of a small flashlight, the guard was replaced with 2 metal clips that fit into grooves, and audibly can be heard to click in place when seated correctly.

The radiator fluid, in this case Prestone, a light green colored fluid and an American Made Company and product, was replaced in the radiator.

Next step was applying some pressure to allow all the bubbles to be driven out of the system, which we could see at the top of the radiator where a plastic basin device had been attached that allowed all the air to come bubbling out. Once no more bubbles occurred, the device and attachment from the radiator cap were removed, having allowed the fluid level to drop back down to the top of the radiator.

It is critically important never to add water to your radiator, as in short time, this will cause the radiator insides to rust.
Only in dire emergencies when all fluids have been lost, due to some mechanical failure, is water only used to get you to the nearest service station where the proper radiator fluids can be replaced.

I know of many people who have topped off their radiators with water. Keep your radiator fluid with you at all times in the trunk of your car.

Our radiator cap is rated according to Toyota specs, at 15 pounds pressure. For every pound there is temperature degree variance and using the wrong cap with the wrong pressure can overstress your radiator.

We started the engine to check on the fan operation, and Marc used a red laser beam device to check the various parts of the radiator for temperature variance. 126 degrees was noted on the outer areas and 86 degrees in the center which suggested that there might be some blockages in the radiator needed flushed and cleaned out.

Final step was attaching a pressure device to assure that no leaks were occurring.

Our next procedure may be to have a radiator expert flush and clean the tank.

We were informed that the radiator would need to be removed from the vehicle for a proper, conclusive procedure.

Radiators in the original Toyotas are metal and pricey - around $400.00. They are, however, the longest lasting ,compared to the plastic ones at a cheaper price, usually made in China.

We would like to ascertain we need replacement, so will be investigating further the radiator flush.

Recent letter to the Editors of several local newspapers:

I have response to the recent article on Global Warming.
Co2 is not the major cause.
Co2 is needed by plants to create Oxygen and we can replant our forests, now decimated by 1/2 , made into cow pastures, to help ease the imbalance.

Methane Gas is the most deadly and destructive of all the greenhouse gases, created by 8 billion humans and their livestock, most notably cows. It accounts for 28 percent currently and outweighs all the Co2 sources combined.

This is the inconvenient truth Al Gore does not mention because his family is living off cattle ranching, and your article writer, Gamble, missed this as well.

Methane is something each of us must do something about. We need no government to curtail what we choose to eat.

Unless we can return to Eden, remember the Fruits of the Trees, and all growing, plant based foods as our intended "Meat", all life is being destroyed for our ignorance and violence. There is every good reason to stop the practice of eating flesh.

To those who argue that the bible gives them the right to kill, and site practices from 1 A.D,overlooking Genesis,

What do you think God would say to the current extinctions of all life being driven by out of control population numbers of humans and animals raised to kill for their flesh?

Can you sacrifice your desire for flesh and return to the Garden of Eden, where no violence was committed, where we were instructed to eat the fruits of the trees?

We are in Biblical times of Armageddon and Revelations where 60% of everything living is currently dying.

We have become the beast.

Unless we enlighten and rethink our destruction and violence on earth, all life is currently collapsing.

Only we can stop the killing, the destruction, and pray we can do it in time to avert the current collapse.

To the scientists of the world, who weep for the current path of destruction, do not give up on your outreach. The entire cycle of life is crying out to us to enlighten.

I am now hosting the only VEGAN potluck in the Santa Cruz Mountains every First Friday of the month at 11:30 a.m. in the Saint Michael's Community Hall on Pine Street.

All are invited to participate, which means bringing your favorite VEGAN foods and drinks to share. I'll be photographing these foods. Post your recipes and any images you have of them at this website, or send to my email address at GreatGourmets@gmail.com.

Let me know if you are planning to come and what you'll be bringing, and if you want to be added to the email list.

All must RSVP and all must participate in clean up of the hall.

Bring your own picnic basket with non-disposable table settings. We do this to eliminate clean up, breakage, and paper plates or plastic forks.

I'll be posting the best foods here at this website, along with other posting locations, and may invite some to be featured in the Broadcast Series: " Great Gourmets".

I am doing this because we are now loosing 200 species a DAY due to 8 billion humans on animal based diets killing everything that lives.

This is an unprecedented loss of life caused by humans and only we can help turn this around by getting back to the garden, a " RETURN to EDEN."

I am now focused on presenting the best choices of diet, namely VEGAN, the only sustainable, environmentally friendly diet, as recommended to us in Genesis.

Perhaps God knew something about what is happening now.

Here are a few of the foods being brought to the table.

Bring your own tuperware to take the left overs back home with you, and back out into the community for those who need it.

Everyone who comes is taking home more than they are bringing.


VEGAN mayonnaise, recipe included in this post, and other VEGAN gourmet foods.

Yield 3 1/2 cups. Units US

2 1⁄4 cups safflower oil

1 cup soymilk

1 tablespoon maple syrup or 1 tablespoon agave nectar

3⁄4 teaspoon sea salt (to taste)

3⁄4 teaspoon sea salt (to taste)

2 -2 1⁄2 teaspoons apple cider vinegar, raw or 2 -2 1⁄2 teaspoons lemon juice, fresh squeezed

combine all ingredients except vinegar or lemon juice in blender, blending until smooth.

Slowly add vinegar or lemon juice until liquid thickens.






Greek tomato Fritters from Santorini:


5 roma tomatoes, diced


¾ onion, finely diced*

V1 garlic clove, pressed

1 tablespoon fresh parsley

½ teaspoon thyme

1 teaspoon oregano

Salt and pepper

1 1/2 cups flour

1 tablespoon bread crumbs (optional)

½ cup olive oil, for frying






Tabouli





2 cups bulgur or cracked wheat

2 cups very hot water

1 cucumber, chopped

2 small tomatoes, chopped

1 bunch green onions, (8) sliced

1/4 - 1/2 cup fresh chopped mint, to taste

2 cups fresh chopped parsley

1 clove garlic, minced (optional)

Dressing:

1/2 cup fresh lemon juice

3/4 cup extra virgin olive oil

1 tablespoon pepper

1 teaspoon salt, or to taste

Soak the cracked wheat in the hot water until the water is absorbed, about 30 minutes. When it's ready, drain any excess water, if necessary, and squeeze dry.

Meantime, prepare the vegetables for the salad and mix the dressing ingredients together. Set aside.

Stir the prepared bulghur, other salad ingredients, and dressing together in a medium bowl.

Serve chilled or at room temperature. Makes about 8 cups, 12 to 16 servings.








VEGAN Chocolate Brownie Ice Cream with Raspberries


Ingredients for VEGAN Chocolate Brownie Ice Cream

1 can(~1 3/4 cups) full fat quality coconut milk (organic when possible)

1 cup unsweetened vanilla almond milk

1/2 tsp xanthan gum

2/3 cup unsweetened cocoa powder

1 tsp pure vanilla extract

1/4 cup + 2 Tbsp raw sugar ground in a coffee grinder (or sub honey)

3-4 vegan gluten free black bean brownies

Instructions

Place coconut and almond milk, xanthan gum, cocoa powder, vanilla and sugar in a blender and blend until well combined. Transfer to a mixing bowl, cover and refridgerate
until chilled through - at least a couple hours.

Once chilled, pour into pre-chilled ice cream maker and use according to directions. (Alternatively, pour into a freezer-safe container, cover and freezer, taking out to stir
every couple hours to aerate.)

Once the ice cream is at soft-serve consistency, add in brownie chunks. YOu can either do this at the end of the ice cream maker's churning process, or once you pour it into
a container. Smooth the top with a spoon, cover and freeze until firm. Or, eat immediately though it will be quite soft.

I have dreams that cover many lives and times and experiences,

and I have recognized my true husband from many threads and many times.

It is not that important the time we have to spend with each other,

because we are never parted.

There is important work we have come into each incarnation to accomplish,

and there have been many years of being apart in each of these.

It does not diminish the love, but increases it, as we each know each other,

communicate over all time and space,

and know there is no end.

We are always in each others heart and mind

and our thoughts cross over all time.

the 10th annual " Taste of Santa Cruz " , a fundraiser for low income real estate purchase, offsetting some of the closing costs to make purchase more affordable, was once again, held at the Coconut Grove in Santa Cruz on Thursday, November13th, 2014 from 5:30 to 9 p.m.

Proceeds benefit The Santa Cruz County Association of REALTORS Housing Foundation.

Each Real Estate Office partnered up with a local restaurant or food provider for tastes of their food and beverages.

The following is an assortment:

Animal based diets predominated, and I would suggest setting up a special area for Vegan and Vegetarian foods to make them easier to locate, and to expand the audience with environmentally sustainable and friendly foods for next year.

Ending Hunger and Food Waste

Segment 502 filmed in Santa Cruz on VEGAN meals served every weekend by the group,

Food not Bombs

is being aired.

Tuesday, April 29th, will be the first VEGAN potluck held in Felton and Felton Presbyterian Church at 12 noon, where all are invited to bring a plant based food item to share.

It is important that we attempt to save the world with every bite of food we take, and to this purpose I'll be orchestrating the event.

I participate in feeding the community every Tuesday and Friday. Tuesday in Felton, and Fridays in Boulder Creek at Saint Michaels Church. Vegetarian meals are created on Fridays.

7 billion humans will be exploding into 52 billion people in the next 40 years, and half the species of life on earth are predicted to be extinct by then. We can help turn this around by what we choose to eat.
The Garden of Eden diet, namely Vegan, is the most healthy diet for both us and our world.

Make a difference with every bite you take!
